For some reason, this afternoon while driving home … my mind wondered … does anyone else do this? 🙂  In my mind’s journey, it focused on a recipe containing pumpkin.  I had seen a partucular pumpkin recipe earlier in the month.  I copied the link, sent it to my email to make sure I would not lose it. This morning, I printed the recipe for my “to make” file. This activity did not seem to satisfy the muse … “keep searching when you get home” …

So, I began pondering – just how did I find the website for the recipe. Was it from a blogging friend who posts recipes occasionally? Hmmm, the answer was no!

My searching continued for several additional minutes. Lo and behold, not only did I find the original site of said recipe, but in the continuation of searching,  I discovered today is

 National Pumpkin Pie Day.

Although, this recipe does not constitute (in the traditional way) pumpkin pie for National Pumpkin Pie Day – the common denominators are pumpkin and enough similar ingredients to qualify for a mid-October autumn treat.

I revisited the beautiful blog,
Willow Bird Baking and the target recipe.

After rereading Julie’s post, searching for previous references in my blog, and a few friends’ blogs, I thought …

“Self”, if none of our blogging friends have made references
to this awesome sounding recipe, then “we” must!!! 

So … what recipe is this all about, you ask?  Answer:

Easy Sopapilla Pumpkin Cheesecake Bars

The photo layout and post with the recipe is delightful to the eye, and tempting to the taste buds!

I also discovered an additional pumpkin recipe, located under “Top Posts”. It is now included in the “must try” recipe file as well:

    Yummmm! I have to say I bake a ‘mean’ pumpkin pie and do enjoy it in other things. I had no idea there was such a day and well deserved of the large orange squash. Well done!

  3. Yummy … wish I wasn’t gluten intolerant. I can’t eat pastries. I was never
    a sweet dessert lover so I don’t miss it. I do LOVE salty things. The saliter the better. So happy salty things have been neglected. I will try these for my friends when they visit.
