“First you make a roux”
Most important step
in Cajun cooking
Be careful not to burn

Dark fragrant roux
Color of brown paper bag
Holy Trinity chopped and added
Peeling and de-veining fresh shrimp
—–
Early memories flood
My mindful moments

While cooking,
my grandmother and dad
are with me
—–
Prepared stew complete
Now
Let flavors meld

    What’s the Cajun trinity? I’m thinking onion, bell pepper and celery. A good roux is an art – as much as poetry or painting. I still remember my first “really good” gumbo – it had a smoky flavor that was completely natural, a result of that perfect roux.

      You are correct … everything tastes better with the “trinity” and a roux … I really get piqued at myself, if I overcook/burn it … it cannot be remedied, no matter how hard one tries — out it must go and start over!!! As a result, I do not often get the “dark” roux, but more like peanut butter!! 😀

  3. GooD Morning Becca Roux was never my strong point I would never have made a pastry chef. Strange though isn’t it how those sights and smells bring back those long forgotten memories.
